Essential to this process are freshness and seasonality not normally found in a Las Vegas restaurant, as exemplified by barMASA’s practice of using fish that have been out of Japan’s coastal waters for no more than 24 hours. Guests dining in barMASA’s understated space face the difficult freedom of selecting their own dishes from the à la carte menu, or they can inquire about ideal pairings from our resident sake sommelier. And before leaving barMASA for the treasures that lie throughout ARIA, make note of the commanding set of 15-foot doors of teak and copper that create a shrine-like passage to one of the best restaurants in Las Vegas.
